Red Rooster – a focus on franchisees

Roast chicken is at the heart of the Red Rooster business but there is so much more to this franchise success story.

When the Kailis family opened its chicken restaurant in 1972 they had no idea that almost 40 years on Red Rooster would become Australia’s largest roast chicken operator. Now the business is focused on building growth through franchisees.

A little bit of history

Founded in Western Australia as the Kelmscott restaurant and bought out by Coles Myer in the 1980s Red Rooster in 1992 acquired the Big Rooster chicken chain. This family franchise business, set up by Phil and Nick Tana, was an eastern seaboard brand which was then rebranded to Red Rooster, bringing the number of outlets across Australia to 230 and introducing the brand to the franchise concept.

In 2002 the Western Australian based group Australian Fast Foods bought Red Rooster from Coles Myer; the business is now owned by Quick Service Restaurant Holdings which acquired the group through a management buy-out in 2007.

What do we serve?

Oven roasted chicken is the core of our business. Red Rooster has been serving roast chicken since 2007 but we do so much more, and with the highest standard ingredients. Our chicken is marinated in a unique blend of Mediterranean herbs and spices for more than 12 hours. The unique Red Rooster oven roasting process slowly cooks the chicken for more than 55 minutes. That doesn’t sound like fast food to us.

Then there’s our skinfree chicken wrap, baguette and a salad for the extra health-conscious customer. The menu options include fish, great tasting chips, nuggets, pineapple fritters, peas and gravy. And who can go past a great tasting dessert? Red Rooster has three tempting sweet-treats.

The kids are catered for too with the Little Red Rooster Meal often linked with high profile licensed characters.

Our franchise commitment

More than 185 of the 370 plus stores we now have are franchised and our focus is very much on the franchise model which serves up a higher growth rate on average than the corporate outlets. Within one year Red Rooster plans to have fewer than 100 of its chicken outlets company owned.

So our aggressive franchising strategy includes converting some of these company-owned stores to franchise businesses as well as opening up greenfield sites. There is still plenty of room for expansion in Australia and in particular New South Wales and Victoria and we plan to open more than 20 outlets annually.

To help build the business to an even greater presence Red Rooster is looking for active, committed franchisees willing to be hands-on in their own outlets. To be a successful Red Rooster franchisee takes discipline and commitment, and experienced operators are welcomed. Opportunities in the Red Rooster business extend to multi-site operations for franchisees with fast-food experience looking for a challenge.

As part of our commitment to helping franchisees build their business we have recently established a franchise advisory committee.

Red Rooster provides 12 weeks of full time comprehensive training before you even open the restaurant doors.
