The consumer. We’re too busy to cook three meals a day, 7 days a week but health consciousness is steadily rising.
Are people moving away from 'junk' food or simply adding healthier selections to their diet?
I think people are moving away from junk food, but not fast food. Patrons will always want convenience.
Are people prepared to pay more for freshness and quality?
The segment of the market that has embraced quality fast food believes the price variation is relatively minor compared to the quality of fresh ingredients and cooking methods used.
Are people becoming more aware of what they’re eating?
Absolutely. I am continually amazed at how proficient the average person is becoming in reading a calorie table or ingredients list.
Is the overall trend for healthier food likely to continue?
I believe it will stick. People will always want their high fat, high sugar treats now and then, and there will always be a market for those that don't care or don't want to know what they're consuming. I think the recent trend has served to raise standards and entry levels for food franchises in Australia. 19.06.2007
