The Hot Earth Hangis franchise defines the ‘Hangi’ method of fast food preparation
The Hot Earth Hangis franchise defines Hangi as a traditional Maori or South Pacific Islanders method of cooking food in the umu or Earth Oven. It is the custom of native South Pacific Islanders to cook their meals in earthen pits in pre-European times, says the fast food business. The people put the food inside a basket made of flax and placed on the pit that contained heated stones. They will cover the pit with banana leaves and sand and heated the food slowly for 4 - 6 hours.
The international cuisine business says that even now traditional groups of Maori and Pacific Islanders use this cooking method. Hot Earth Hangis, while following the traditional methods, maintains present health and safety regulations by using stainless steal crates and iron bricks instead of rocks.
