New Brumby’s bakery franchise…just Go

Brumby’s franchise GO is a new concept that is being trialled in five new outlets, two in Melbourne and three in Brisbane. The stores are smaller, requiring less capital, less skill and a smaller labour force.

Whereas a traditional bakery franchise sells 60 per cent of its bread for take home use and 40 per cent of product is eat now, 90 percent of Brumby’s GO product is eat now.

Brumby’s GO also sells pre-filled rolls and sandwiches and barista coffee. Product is still baked on site but uses German and French frozen dough technology.

Michael Sherlock, Brumby’s Bakeries CEO says the initial performance of all five stores has been encouraging. He expects that the concept will be of interest in overseas markets as well as Australia.
